Screenshot Inbox never connects to the internet at all. The others go online only for specific jobs: FinanceCalc Pro to fetch updated public reference data such as inflation, Treasury rates, and tax tables; Pocket-Journal to add the weather or look up a place name when you ask, and to keep encrypted copies in your own iCloud; Pocket-Boxer to back up to your own iCloud Drive if you turn that on, or to open a shared template from a link you scan; and Word Unlocked to download English Standard Version verses and to load the Recovery Version while you read.
None of them sends anything to us, and none of them tracks you.
